Apple Jacks Cookies

Here is a recipe that can be used universally with several different types of cereal, but today, I had some leftover Apple Jacks, so that was the flavor of choice.  Feel free to be creative!  Between picking the endless flavors and rolling the cookies in the sugar, kids are bound to have fun with this one, too!

Apple Jack Cookies

  •  1 cup butter or margarine
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 3/4 cup flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt (iodized)
  • 3 cups of coursly crushed cereal (no need to crush if pieces are small like fruity pebbles)
  • 1/4 cup white sugar (for rolling cookies)

Directions

Cream together the butter and sugar until light and fluffy.  Add in eggs one at a time and vanilla extract.  Slowly add in dry ingredients mixing until combined.  Stir in cereal.  Roll into 1.5 inch balls and coat in white sugar.  Arrange on a parchement lined baking sheet, about 2 inches apart.  Bake at 375 degrees for 9-11 minutes or until raiseds and just starting to turn golden brown.  Makes about 2 dozen cookies.
